Curated by Paul Winberry, Jr. Executive Chef at Trama’s One Willow.
Paul worked as a commercial lender by day, but at night followed his true
passion and trained at the French Culinary Institute in New York City. After
his initial kitchen job, he moved to California and trained under Douglas
Keane, chef/owner of Cyrus, the only two star Michelin restaurant in Sonoma
County where he rose to Sous Chef. Winberry and Keane competed in TV’s Top
Chef Masters and won the competition. When Cyrus closed he moved back East to
work with Chef Dan Barber at the acclaimed Blue Hill at Stone Barns in
Pocantico Hills, NY. From there he opened the Beach Tavern in Monmouth Beach
and most recently opened Trama’s at One Willow in the Highlands.
